Coconut Chicken Curry

  • 30 grams Simply Chef Curry Powder
  • 1 kilo chicken, cut into serving pieces
  • 8 tablespoons, coconut oil
  • 5 gloves of garlic, peeled, crushed and chopped
  • 1 medium onion, peeled and chopped
  • 1 medium ginger, skinned and cut into strips
  • 2 medium potatoes, peeled and cubed
  • 2 medium carrots, peeled and cubed
  • 1 red bell pepper, cubed
  • 1 cup coconut milk
  • 1 cup water
  • Black pepper powder
  • Salt
  1. Sauté ginger, garlic and onion then sear chicken until lightly browned.
  2. Pour water and Super8 Great Buy Curry Powder, then simmer for 10 minutes.
  3. Put the cubed potatoes, cubed carrots and bell pepper and cook for another 5 minutes.
  4. Add the coconut milk, salt and black pepper cook for 5 minutes or until the sauce thickens.
  5. Enjoy the creamy chicken curry.
