- 30 grams Simply Chef Curry Powder
- 1 kilo chicken, cut into serving pieces
- 8 tablespoons, coconut oil
- 5 gloves of garlic, peeled, crushed and chopped
- 1 medium onion, peeled and chopped
- 1 medium ginger, skinned and cut into strips
- 2 medium potatoes, peeled and cubed
- 2 medium carrots, peeled and cubed
- 1 red bell pepper, cubed
- 1 cup coconut milk
- 1 cup water
- Black pepper powder
- Salt
Coconut Chicken Curry
- Sauté ginger, garlic and onion then sear chicken until lightly browned.
- Pour water and Super8 Great Buy Curry Powder, then simmer for 10 minutes.
- Put the cubed potatoes, cubed carrots and bell pepper and cook for another 5 minutes.
- Add the coconut milk, salt and black pepper cook for 5 minutes or until the sauce thickens.
- Enjoy the creamy chicken curry.
