Annatto Seeds (Atsuete)
Annatto Seeds are dried seeds used as a condiment or food coloring in Filipino Dishes. The seeds are diluted in water, or directly put or the seed can as well be fried in oil to obtain the desired color (discard the seeds after obtaining the desired color).
This is a natural color that is used in cooking palabok (garnished rice noodles), sauce, bringhe (stewed oxtail with vegetables in peanut sauce, java rice (Filipino version) and inasal chicken (chicken barbecue). Though intended for food coloring, it also provides a distinct but mild flavor and aroma.
